This is as rich and creamy as any béchamel you have tasted. It is also mild enough to deliciously complement anything you choose to serve it with. Try it over asparagus or broccoli, with spinach, etc. For an old-fashioned luncheon, try it with carrots, peas, and mushrooms over toast for a taste of midcentury elegance! The trick to this recipe is to make sure the nuts are blended until totally smooth.

1 cup cashews

2 cups water

½ teaspoon salt

¼ teaspoon freshly grated nutmeg

¼ teaspoon white pepper
